For over five years I've eaten yogurt for breakfast. Every single day. Okay made I switched it once or twich for a smoothiebowl or a nice bowl of oatmeal in the weekend but at least 6 days a week I eat yogurt with granola and a banana. And if you're like me ADDICTED to peanut butter this is the best granola you could wish for!
I've made it only once but it was so good that I had to share it with you guys. You can enjoy this recipe with (plant based) yogurt or (plant based) milk for breakfast, or as a snack.
Prep time : 10 minutes - Cook time: 30 minutes - Total 40 minutes
INGREDIENTS: (8 servings)
Dry ingredients:
2½ cups (250 g) old-fashioned rolled oats (GF if desired)
1 cup buckwheat (you can also use puffed quinoa or sub for an equal amount oats)
½ cup raw almonds, coarsely chopped
½ cup raw pecans, coarsely chopped
½ cup unsweetened shredded coconut
½ cup pumpkin seeds
½ tsp cinnamon
Wet ingredients:
¼ cup vegetable oil
¼ cup agave sirop
¼ cup peanut butter
1 tsp pure vanilla extract (or almond extract)
¾ tsp salt
2 Tbsp (20 g) hemp seeds
½ cup (80 g) dried fruit, thinly sliced (you can use mango, abricots, cranberries, raisins)
INSTRUCTIONS:
Preheat the oven to 160°C.
To a large bowl, add the oats, quinoa, shredded coconut, pumpkin seeds and the cinnamon, and give it a stir.
To a separate medium bowl, add the vegetable oil, agave syrup, peanut butter, vanilla extract, and salt. Whisk until it's all combined into a smooth sauce.
Pour this wet mix over the dry mix, and stir until all the dry mix is well coated. Transfer this mixture to a large parchment-lined backing-tray and spread it out.
Bake the granola in the oven for 30 minutes, or until lightly golden, stopping to give it a stir at least once halfway.
Once removed from the oven, allow it to cool. The granola will continue to harden as it cools down. Once cooled, add the hemp seeds and dried fruit. Toss and place it in an airtight container.

NOTE: If you're not a fan of peanut butter (which I can't possibly imagine) you can also use almond butter or any other kind of nut butter you like.
NOTE: You can also add little chunks of chocolate instead of dried fruit because who doesn't like chocolate for breakfast!
